Biscuit Table, ca. 1850-1860

Mabry-Hazen House

Knoxville, East Tennessee

Selected by Executive Director and Curator Patrick Hollis

This biscuit table belonged to Mrs. Laura Mabry, and her name is engraved on the surface. It was used to make labor-intensive beaten biscuits, so it is unlikely that Mrs. Mabry used it. Eliza Franklin, Molly, or another enslaved person were the ones who used this artifact. The biscuits they made were a status symbol - both because of the ingredients they used and because they were made with enslaved labor.
